Marcus filmed this series over three consecutive Saturdays at the Oistins market and the twelve-seat counter in Fitts Village. What arrived was less a recipe collection than a working method — a way of building a menu from what the boats and the garden actually offer that morning.

The eight lessons trace the arc of a single service, from the 5:30am walk down to the fish stalls to the last plate leaving the pass. Each includes a printable ingredient sheet and a short mise-en-place drill.

Watch in order the first time. After that, treat it like a shelf — reach for the pepper sauce lesson on a hot afternoon, the flying fish reel when you have friends coming for dinner.
